Herbes de Provence is the nearly mythical blend of green herbs from the Mediterranean landscape called the garrigue. Officially, for it to be called Authentic French Herbes de Provence there are only four ingredients. Herbes de Provence has a pedigree, called a Label Rouge, which specifies its ingredients. Label Rouge is a sign of quality assurance in France as defined by Law No. 2006-11. Products eligible for the Label Rouge are food items and non-food and unprocessed agricultural products such as flowers.

Use it over fresh goat cheese, eggplant, and grilled peppers, use them on dough that I drizzle with olive oil and bake into fougasse, a French flat bread. It’s impossible not to think of pizza baked in a wood-fired oven, grilled eggplant with goat cheese, lamb roasted over the coals when using this herb mixture.
